Wild edible mushrooms are distributed all over the world and are delicious seasonal foods, rich in polysaccharides, amino acids, vitamins, and other components. At the same time, they contain many essential trace elements and are highly enriched in heavy metals (compared to green plants and cultivated edible mushrooms). Consumers may be exposed to health risks due to excessive heavy metals in the process of consumption. This is also one of the important factors affecting the import and export of edible mushrooms, which is of great concern to consumers and entry and exit inspection and quarantine departments. In this paper, the contents of four essential trace elements of iron, manganese, zinc, and copper and four harmful heavy metals of cadmium, lead, mercury, and arsenic in nearly 400 species of wild edible mushrooms from 10 countries are reviewed. It was found that the factors affecting the elemental content of edible mushrooms are mainly divided into internal and external factors. Internal is mainly the difference in species element-enrichment ability, and external is mainly environmental pollution and geochemical factors. The aim is to provide a reference for the risk assessment of edible mushrooms and their elemental distribution characteristics.

Recently, consumption of the gyromitrin-containing neurotoxic mushroom Gyromitra sp. (false morel), as gourmet food was hypothesized to play a role in sporadic amyotrophic lateral sclerosis genesis. The present review analyses recent data on edibility and toxicity of false and true morels and Agaricus spp. Controversy about the toxic status of Gyromitra esculenta was due to variable toxin susceptibility within consumers. We suggest that Verpa bohemica , another false morel, is also inedible. We found a temporary neurological syndrome (NS) with cerebellar signs associated with high consumption of fresh or dried true morels Morchella sp. After ingestion of crude or poorly cooked fresh or dried morels, a gastrointestinal "haemolytic" syndrome was also observed. Agaritine, a water soluble hydrazinic toxin closely related to gyromitrin is present along with metabolites including diazonium ions and free radicals, in Agaricus spp. and A. bisporus, the button mushroom, and in mice after ingestion. It is a potential weak carcinogen in mice, but although no data are available for humans, a lifetime low cumulative extra cancer risk in humans can be estimated to be about 10 -5 . To conclude, a safety measure is to avoid consuming any true morels or button mushrooms when crude or poorly cooked, fresh or dried.

The accessions of the morel (Morchellaceae, Ascomycota) germplasm collection were genetically analyzed, in order to determine both their inter- and intraspecific relationships. This was done as a starting point for cultivation experiments, as well as to provide a genetic description of invasive morel populations linked to mulched garden patches, as compared with outdoor morels. The phylogenetic data, which was based on the internal transcribed spacer (ITS) sequences and supported by amplified fragment length polymorphism (AFLP) analyses, divided the germplasm isolates and accessions from the sequence database into three groups of yellow morels, and three groups of black morels, involving a remarkable monotypic genus of half-free morels (Mitrophora semilibera), the groups Morchella conica and M. angusticeps. Both Morchella groups include morel samples that use mulch bark as a vector for their spread across gardens in various locations in the Czech Republic. The AFLP analysis supported the ITS-based phylogenetic data and determined the intraspecific genetic profile of these, as a rule, almost entirely unstudied isolates.
